Almost two months of med school down...
I cannot believe it is September 22...Um, where has the time gone?? I guess I am doing a great job of illustrating what it looks like to be a med student...BUSY! I haven't posted anything in a month...Well, let's change that...
Aaron's mom, Janice, just got here a week ago and has been diligently unpacking her boxes and making herself at home. It has been so wonderful to have her here. I have a friend to talk with other than my beloved cat. Once she has settled down we will officially post photos on here of our new home.
Aaron has completed his first test block and is working on studying for his second which is at the end of the month. (A test block is comprised of about 9-11 tests in a two day span. Yes, a bit insane for the average brain). We also celebrated him receiving his white coat (his "Dr Coat") last weekend.

Over these last couple of months we have developed a routine that seems to be working well. Aaron studies between 10-12 hours a day, Monday-Saturday with Sundays off which have been a HUGE blessing. Sundays is his day to just soak up the Lord and let his brain be transformed and renewed by the Word of God versus text books. God has been really developing Aaron's character through these couple of months. I have seen him learn how to be incredibly busy with school, but not worship it. It has been amazing for a wife to watch this challenge being overcome, and he's been an example to me. The beautiful thing is it is not Aaron doing the overcoming, but the Lord in Aaron's weakness.
As for me, God is encouraging me to become a woman of prayer. Praying for my husband, praying for our family and our new church we have started to attend. I recently joined a Bible study called, "Lord, Teach Me to Pray" by Kay Arthur, and it is such an inspiration. The amazing thing about prayer, is exactly the title of the book...I do not have to have it figured out. God will show me how to pray and put that desire in my heart to. Watching my husband struggle with the business of school has made me realize that God is the One who meets US right where WE ARE. Isn't that an incredible thing to fathom? I read today in study, "He will guard the feet of His saints" (1 Sam. 2:9b). No matter where we are or what we are struggling with HE knows our every step, our every option in the world and HE will protect us and lead us to His will.... I do not have to worry about making the right move for if I ask for His will to be done, HE will LEAD. Amen?!?! Sorry for the preaching...Can you see I'm a little excited about this study??
On for what everyone has been licking their lips for....Food that makes us giddy!
Eating clean is so important for a med student when their schedules are so chaotic. My man is happy to come home to good calories which helps his mind think clearly, but not too many that end up being stored as fat.
Here are a few things I've made this week that made my med student so happy to come home...
Roasted Pork Tenderloin with Sweet Sage Glaze (217 per serving, about 1/4 of pork roast) and Roasted Red Potatoes (100 calories)
And the one that everyone has been asking about

Butternut Squash Soup (92 calories)

Chocolate Almond Cake Ingredients Recipe
Eat Clean Cooking Spray 1.) Preheat oven to 350*. Coat a 9 inch round baking
1 cup plus 1 TBSP Whole Wheat Flour pan with Cooking Spray and 1 Tbsp ww flour, discard
1/2 cup cocoa powder excess flour.
1/2 cup unrefined turbinado sugar 2.) Whisk together 1 cup flour, cocoa powder, sugar,
2 Tbsp ground golden flaxseed flaxseed, baking powder, baking soda and salt in large
1 tsp baking powder bowl. Stir in egg whites, applesauce, buttermilk, almond
1/2 tsp sea salt butter and almond extract. Carefully whisk in hot coffee
2 egg whites until thoroughly combined. Batter will be thin.
1/2 cup unsweetened applesauce 3.) Pour batter into sprayed and floured pan and bake in
1/2 cup low-fat buttermilk oven until a toothpick inserted in center comes out
1/4 cup natural unsalted almond butter almost completely clean, about 40 mins. (Ours took 35).
1/2 tsp real almond extract Cool 10 minutes and remove from pan to a wire rack.
1 cup freshly brewed very hot coffee Top with toasted almonds and cut into slices.
3 TBsp sliced toasted almonds Makes 12 servings.
